Immune Boosting Popsicles

Preschool germs! Yuck! They are inevitable and impossible to avoid, but our hope is that if we eat the right diet we can reduce our chances of getting sick.

The Cub loves popsicles, so what better way to get her to eat a mixture of foods that will help improve her immune system. Let’s break down the ingredients.

We began by removing the skin from the turmeric. Warning: it stains! So this was a job for Grandma DiDi! Did you know Tumeric contains bioactive compounds with powerful medicinal properties? Turmeric may be the most effective nutritional supplement in existence.

We used another powerful spice, ginger, which is high in gingerol, a substance with powerful anti-inflammatory and antioxidant properties. We peeled the ginger as well and chopped it up. The cub added it to the blender.

We juiced Cara Cara oranges and lemons, both packed full of Vitamin C. A necessary vitamin to fight colds. Plus, they are juicy and sweet! And the Cubs personal favorite, Mangos! She chopped the meat and placed it in the blender.

The Cub gets help from Grandma DiDi squeezing the juice of the oranges and lemon.

And of course, she had to try the oranges for herself!

Next we add the honey. Honey is packed full of antioxidants. This powerhouse phytonutrient can have antibacterial properties and is a great sugar substitute.

After all the ingredients were added, little cub joined to blend it up. She loves the noise and the vibration of the blender.

After all was blended until smooth, we poured the mixture into our Tovolo popsicle molds.

Into the freezer they go.

Immune Boosting Popsicles (recipe from relish.com)

Ingredients

  • tablespoons lemon juice
  • 1/4 cup orange juice
  • cups diced mango
  • 1 2-inch piece of ginger root, peeled and roughly chopped
  • 1 2-inch piece of turmeric, peeled and roughly chopped (OR 2 tbsp ground turmeric)
  • 1/3 cup honey

 

Directions: 

  1. Combine all ingredients in a food processor or blender. Blend until smooth. Pour into popsicle molds and place in the freezer.
  2. When ready to enjoy, run pop molds under warm water to release the popsicles.

Summertime means sun, lots of outdoor fun and a time when you can buy the most delicious fruit! One in particular – Cotton Candy grapes! If you haven’t heard of them, ask your local grocer if they are getting any in and make sure to grab a bag before they are gone. I know when they hit the shelves in our hometown they don’t last long!  They are super sweet and taste just like cotton candy.

We grabbed a bag and decided to make popsicles with them!  And these couldn’t be easier!

The cub started by chopping the grapes in half. We wanted to keep some of the grapes in bigger chunks.

The rest of the grapes she dumped into the blender.

For liquid we added one squeeze apple juice box to the blender.

A quick stir and then it was time to blend up the ingredients.

Time to get the Koji popsicle mold ready for the mixture.

In goes the apple grape mixture… oh, and a little friend joined in on the fun.

Grandma DiDi, the cub and her friend all helped put the grape halves in the popsicle mold. The bigger chunks give the popsicle more texture.

Last step before they go in the freezer is to put the sticks and caps on.  Notice that Grandma DiDi is getting a little help from a Santa sticker strategically placed on her arm by the cub earlier that morning.

Finally! The sweetest popsicle on a hot summer day!

 

Cotton Candy Popsicles

Ingredients

  • 1 1/2 cups of cotton candy grapes; save about 1/8 cup just chopped
  • 1 7oz apple juice box

Directions

  1. Wash and prepare grapes
  2. Chop all grapes (reserve approximately 1/8 cup)
  3. Place grapes (except reserved) in blender
  4. Add 1 box of apple juice
  5. Blend for about 1 minute or pulse about 10 times
  6. Pour into popsicle mold
  7. Add reserved chopped grapes to each popsicle mold
  8. Freeze and enjoy. It should take 1 – 3 hours to fully freeze depending on the molds you use

It’s getting to be that time again… popsicle season!   We decided to make it simple and use one of the cubs favorite ingredients – Bananas!

First, we prepared all the toppings.  The Cub peeled the bananas and cut them in half.   This step uses her fine motor skills.

Grandma DiDi demonstrated inserting the popsicle sticks after the Cub was finished cutting the bananas.

The Cub gave it a go although it was hard to not push the stick all the way through the banana. Patience and practice make perfect.

Next up the cub needed to choose her toppings, but first, of course, she needed to taste them all!!

Grandma DiDi rolled some of the bananas in peanut butter and others in greek yogurt; making sure to cover them well.

After laying the bananas on a flat parchment lined surface, the Cub got busy decorating them with our toppings – coconut, granola and hemp seeds.

After sitting in the freezer for an hour they are ready to eat! We let her decorate one with fancy sprinkles. Guess which one she ate first?!

Banana Pops

Ingredients

  • Bananas, cut in half
  • Popsicle sticks
  • Nut butter of your choice
  • Yogurt
  • Shredded coconut
  • Granola
  • Sprinkles
  • Hemp seeds
  • Or any topping of your choice (chocolate would be great, too)

Directions

  1. Peel and cut bananas in half
  2. Push popsicle sticks into banana (at least an inch and a half)
  3. Roll and completely cover banana in either yogurt or nut butter
  4. Lay flat on parchment paper
  5. Sprinkle or roll on topping of choice
  6. Freeze for at least 1 hour
  7. Enjoy!

*You can store in the freezer in a air-tight container.

Berry Veggie Popsicle

Did I mention we eat a lot of popsicles? We’re definitely on a popsicle kick with this heat! The cub helped Grandma DiDi create the perfect berry (with greens) popsicle. As always, no added sugar!

Four whole ingredients, that’s it! Strawberries, blueberries, kale and broccoli.

First, we had the cub help us tear the kale off the stem. Drop the kale leaves in a bowl of cold water and clean the leaves thoroughly. Wash strawberries, blueberries and broccoli.

Have your cub add all the ingredients into your blender (or Vitamix in our case).  Add water or juice if you want it to be sweeter and blend.

The cub watches as Grandma DiDi pours the mixture into the Koji Popsicle Mold.

Have your cub help place the holders in each mold making sure that just a tiny bit squishes out the sides. Pop in the freezer for two hours and enjoy!

They are fruity and delicious and the perfect treat for a hot summer day. There is no easier way to get your little one to eat their veggies. Our cub has been eating these from day one and has no idea popsicles don’t usually include vegetables . Hoping to keep it this way for as long as possible!

 

Berry Veggie Popsicles

(Makes approximately 8 Koji popsicles)

Ingredients

1 cup strawberries
1 cup blueberries
1/4 cup raw broccoli
1/2 cup lightly packed raw kale
3/4 cup water (or juice of choice)

Directions

  1. Combine all ingredients in a blender or Vitamix.
  2. Blend and add more liquid if necessary.
  3. Pour mixture into popsicle mold.
  4. Drop popsicle handle in and make sure you can see through mixture lightly squish out the sides of the handle.
  5. Place in the freezer for two hours and enjoy!

*If you have extra mixture left over, serve it as a smoothie!

Summer is here and that means lots of popsicles in our home! We’ve been making our own popsicles since our little cub was teething. It’s a great way to sneak in some greens and of course, skip the sugar!

Grandma DiDi dreamed up these piña colada popsicles in a yoga class a few months back. She truly never stops thinking about food. 😉 We are thankful she had that moment in yoga because these are delicious! Not to mention they only take 10 minutes to make.

Seven ingredients, that’s it. Almonds, dates, pineapple, banana, coconut, yogurt and lime. Easy peasy!

We started with the cub cutting the dates in half and taking the pits out. Every little chef needs the right tools and we think Curious Chef makes great kitchen accessories for toddlers. They are not paying me to say that – I truly like them!

Back to the recipe – Pulse the almonds and dates until they are blended into a fine crumble.

We found the perfect popsicle mold at Target and they are just the right size for the cub. If you are in the market, they are called Koji Ring popsicle mold. You can also use an ice cube tray with popsicle sticks or your own favorite popsicle mold.

Grandma DiDi shows the cub how to scoop the almond and date mixture into the Koji Ring popsicle mold. The cub is excited to show Grandma DiDi which hole is next. After all the molds have a teaspoon of almond mixture, use the back of a spoon and press the crumble tightly into the form. Set aside the rest of the almond and date mixture as you will need it later.

Using your food processor again, have your cub help add the rest of the ingredients. Squeezing the lime juice was a fun and a new experience for the cub. Blend together until all ingredients are well-mixed. The pineapple can be in small chunks.

The cub scoops a teaspoon size dollop of the yogurt mixture into the mold. Repeat a layer of the almond and date mixture and then another layer of yogurt mixture.

Stop and taste your creation!

Lastly, place the mold handles on the top and make sure just a small amount of mixture squeezes out of the sides. Pop them in the freezer for two hours and then enjoy!

Piña Colada Popsicles

(Makes approximately 8 Koji popsicles)

Ingredients

1/2 cup nonfat greek yogurt
1 small banana
1/4 cup pineapple
1/2 tsp lime juice
1/8 cup sweetened coconut
1/2 cup slivered almonds
3 dates

Directions

  1. In a food processor combine dates and almonds. Process until mix is a fine crumble and set aside.
  2. Fill base of the popsicle mold with thin layer of almond/date mixture. With the back of a spoon, press the mixture down packing it tight.
  3. In the same mixer, blend yogurt, banana, pineapple, lime juice and coconut. Pineapple can be in small chunks.
  4. Layer with a scoop of yogurt mixture. Repeat the layers one more time.
  5. Drop popsicle handle in and make sure you can see the yogurt mixture lightly squish out the sides of the handle.
  6. Place in the freezer for two hours and enjoy!
